  • 1 ½ cups Gluten-free all-purpose flour With xanthan gum
  • ½ cup Almond flour Adds moisture
  • ¼ cup Tapioca starch Lightens texture
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • 1 teaspoon Cinnamon Optional
  • 3 large Bananas Ripe mashed
  • ½ cup Butter Melted or coconut oil
  • ½ cup Brown sugar Packed
  • ¼ cup Granulated sugar
  • 2 large Eggs Room temperature
  • ¼ cup Sour cream Or Greek yogurt
  • 2 teaspoon Vanilla extract
Frosting:
  • 8 oz Cream cheese Softened
  • ¼ cup Butter Softened
  • 1 ½ cups Powdered sugar Sifted
  • 1 teaspoon Vanilla extract
  • teaspoon Salt Balances sweetness
  • ½ cup Chopped walnuts Optional for topping

Equipment

Method

  3. Whisk gluten-free flour, almond flour, baking powder, salt, and cinnamon.
  4. Beat butter, sugars, eggs, vanilla, and sour cream.
  5. Fold dry ingredients into wet, then mix until just combined.
  6. Pour into pan, smooth top, and bake for 30-35 minutes.
  7. Let cool in pan for 10 minutes, then transfer to a rack.
