  • ½ cup Almond flour - Adds moisture
  • ¼ cup Tapioca starch - Lightens texture

  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • 1 teaspoon Cinnamon - Optional
  • 3 large Bananas - Ripe mashed
  • ½ cup Butter - Melted or coconut oil
  • ½ cup Brown sugar - Packed
  • ¼ cup Granulated sugar
  • 2 large Eggs - Room temperature
  • ¼ cup Sour cream - Or Greek yogurt
  • 2 teaspoon Vanilla extract

Frosting:

  • 8 oz Cream cheese - Softened
  • ¼ cup Butter - Softened
  • 1 ½ cups Powdered sugar - Sifted
  • 1 teaspoon Vanilla extract
  • teaspoon Salt - Balances sweetness
  • ½ cup Chopped walnuts - Optional for topping

Instructions 

  • Preheat to 350°F and grease pan.
  • Mash bananas, bring eggs and butter to room temp.
  • Whisk gluten-free flour, almond flour, baking powder, salt, and cinnamon.
  • Beat butter, sugars, eggs, vanilla, and sour cream.
  • Fold dry ingredients into wet, then mix until just combined.
  • Pour into pan, smooth top, and bake for 30-35 minutes.
  • Let cool in pan for 10 minutes, then transfer to a rack.
