Ingredients

  • 2 lbs boneless chicken breasts - Cut into 1-inch cubes
  • ¼ cup olive oil - Divided
  • 2 tablespoons lemon juice
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt - For marinade
  • ¼ teaspoon black pepper - For marinade
  • 6 cloves garlic - Minced fine
  • ¾ cup parmesan cheese - Freshly grated
  • 2 tablespoons mayonnaise
  • 1 tablespoon olive oil - For coating
  • 1 teaspoon dried parsley
  • ½ teaspoon garlic powder
  • ¼ teaspoon red pepper flakes - Optional

Instructions 

  • Chicken cubes in oil, lemon juice, seasonings 30 minutes
  • Wooden skewers in water while chicken marinates
  • Marinated chicken onto skewers leaving small gaps
  • Garlic, parmesan, mayo, oil, herbs into paste
  • Each skewer with parmesan mixture thoroughly
  • Grill 12-15 min, oven 15-18 min, or air fryer 10-12 min
  • Halfway through cooking for even browning
  • 5 minutes before serving for juiciest results

Notes

For best results, use freshly grated parmesan and soak skewers well to avoid burning on the grill.
