Ingredients

  • 3-4 pounds Chuck roast - trim excess fat
  • 2 large - Yellow onions sliced thin
  • 2 cups Beef broth - low-sodium preferred
  • 1 packet French onion soup mix - about 1 oz
  • 2 tablespoons Butter - for caramelizing onions
  • 4 cloves Garlic - minced
  • 1 tablespoon Worcestershire sauce - optional extra for richness
  • 3-4 sprigs Fresh thyme - or 1 teaspoon dried thyme
  • 1 teaspoon Salt - to taste
  • ½ teaspoon Black pepper - to taste
  • 2 tablespoons Flour - optional for thickening gravy

Instructions 

  • Pat roast dry and season with salt and pepper.
  • Sear roast in hot skillet until browned on all sides.

  • Remove roast; add butter and sliced onions to pan.
  • Cook onions slowly until golden, add garlic last 2 mins.

  • Stir in French onion soup mix, beef broth, and Worcestershire sauce; simmer.
  • Transfer roast and onion mixture to slow cooker.
  • Cover and cook on LOW for 8–10 hours or HIGH for 5–6 hours.

  • Remove roast; thicken gravy if desired with flour-water slurry.
  • Shred or slice roast, serve topped with onion gravy.
