Ingredients
  

  • 3-4 pounds Chuck roast trim excess fat
  • 2 large Yellow onions sliced thin
  • 2 cups Beef broth low-sodium preferred
  • 1 packet French onion soup mix about 1 oz
  • 2 tablespoons Butter for caramelizing onions
  • 4 cloves Garlic minced
  • 1 tablespoon Worcestershire sauce optional extra for richness
  • 3-4 sprigs Fresh thyme or 1 teaspoon dried thyme
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper to taste
  • 2 tablespoons Flour optional for thickening gravy

Method
 

  1. Pat roast dry and season with salt and pepper.
  2. Sear roast in hot skillet until browned on all sides.
    Chuck roast seared in skillet until browned on all sides. Creates flavor base for the French onion pot roast.
  3. Remove roast; add butter and sliced onions to pan.
  4. Cook onions slowly until golden, add garlic last 2 mins.

  5. Stir in French onion soup mix, beef broth, and Worcestershire sauce; simmer.
  6. Transfer roast and onion mixture to slow cooker.
  7. Cover and cook on LOW for 8–10 hours or HIGH for 5–6 hours.

  8. Remove roast; thicken gravy if desired with flour-water slurry.
  9. Shred or slice roast, serve topped with onion gravy.
