Instructions 

  • Process cottage cheese until smooth, then add Greek yogurt and blend until creamy. Set aside.
  • In a bowl, whisk together protein powder, almond flour, natural sweetener, and salt.
  • Gradually mix the dry ingredients into the wet mixture. Add vanilla extract and fold gently until a dough forms.
  • Do not overmix to preserve the texture.
  • Fold chocolate chips or other mix-ins into the dough.
  • Scoop into portions using a cookie scoop or shape into bars.
  • Chill for 15 minutes if desired for firmer texture.
