Method
 

  1. Process cottage cheese until smooth, then add Greek yogurt and blend until creamy. Set aside.
  2. In a bowl, whisk together protein powder, almond flour, natural sweetener, and salt.
  3. Gradually mix the dry ingredients into the wet mixture. Add vanilla extract and fold gently until a dough forms.
  4. Do not overmix to preserve the texture.
  5. Fold chocolate chips or other mix-ins into the dough.
  6. Scoop into portions using a cookie scoop or shape into bars.
  7. Chill for 15 minutes if desired for firmer texture.
