Method
 

  1. Chop your sweet seedless red melon into uniform two-inch cubes, discarding the tough green outer rind entirely.
  2. Transfer the cut melon pieces into your blender container along with the fresh lemon juice and honey.
  3. Secure the blender lid tightly and process on high speed for one minute until completely liquefied.
  4. Pour the blended red mixture slowly through a fine-mesh strainer set over a clean glass pitcher.
  5. Press the remaining red fibers gently with a spatula to extract every bit of the sweet juice.
  6. Fill your individual glass mason jars all the way to the top rim with fresh crushed ice.
  7. Pour the strained watermelon juice slowly over the crushed ice layers to maintain a frost-bitten temperature.
  8. Garnish each glass with a yellow lemon wheel, a small melon wedge, and clapped fresh mint sprigs before serving.

Notes

Flash-freezing the melon cubes for fifteen minutes before blending locks in the deep crimson color and keeps the drink frost-bitten without watering it down with excess ice.
