Easy Tater Tot Casserole

Ingredients
  

For the Beef Layer
  • 2 lbs Ground beef 80/20 preferred
  • 1 medium Onion Diced
  • 2 cloves Garlic Minced
  • 1 can Cream of mushroom soup 10.5 oz
  • 0.5 cup Sour cream Adds creaminess
  • 1 cup Frozen mixed vegetables Corn, peas, carrots
  • 1 teaspoon Worcestershire sauce For depth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Onion powder
  • 0.5 teaspoon Garlic powder
Topping
  • 1 bag Frozen tater tots 32 oz
  • 2 cups Cheddar cheese Shredded
  • 1 cup Mozzarella cheese Shredded
  • 2 stalks Green onions Sliced, garnish
  • Fresh parsley Optional garnish

Equipment

  • Large skillet For browning ground beef
  • 9x13 baking dish Glass or metal
  • Wooden spoon For sautéing beef
  • Cutting board For chopping onions
  • Cheese Grater If shredding cheese fresh
  • Aluminum foil Optional, for covering while baking

Method
 

  1. Brown ground beef in skillet, breaking into crumbles. Add onion and garlic halfway through.
  2. Season with salt, pepper, garlic powder, onion powder, and Worcestershire sauce. Drain fat.
  3. Stir in cream of mushroom soup, sour cream, and frozen vegetables until combined.
  4. Spread beef mixture evenly into greased 9x13 dish.
  5. Arrange frozen tater tots in single layer on top.
  6. Bake at 375°F for 40–45 minutes until tots are golden and crispy.
  7. Sprinkle cheddar and mozzarella over top. Bake 5–7 more minutes until melted.
  8. Let sit 5 minutes before serving. Garnish with green onions and parsley.

Notes

For extra crispiness, broil the tots for 2–3 minutes at the end. You can swap cream of mushroom for cream of chicken or make a homemade version.
