Easy Strawberry Poke Cake

Equipment

  • 1 9x13 inch pan (Glass preferred for visibility)
  • 1 Wooden spoon (For poking holes)
  • 1 Large fork (Alternative to spoon for poking)
  • 1 Mixing bowl (For gelatin)
  • 1 Measuring Cup (Glass or heat-safe for boiling water)
  • 1 Offset spatula (For smooth topping application)

Ingredients

  • 1 box white cake mix - Follow box instructions
  • eggs, oil, water - As called for on box
  • 1 pkg strawberry gelatin (3 oz)
  • 1 cup boiling water
  • 0.5 cup cold water
  • 1 container whipped topping (8 oz) - Thawed
  • 1.5 cups fresh strawberries - Sliced
  • 2 tablespoon granulated sugar - For macerating strawberries
  • whole strawberries - For garnish

Instructions 

  • Prepare cake mix and bake in a 9x13 pan
  • Cool completely on a wire rack
  • Poke holes all over the cake with spoon handle
  • Dissolve gelatin in boiling water
  • Stir in cold water and cool slightly
  • Slowly pour gelatin over entire cake surface
  • Refrigerate for 3+ hours
  • Toss strawberries with sugar and let sit
  • Spread whipped topping over chilled cake
  • Top with berries and garnish as desired
