Easy Strawberry Poke Cake

Moist, fruity, and stunningly easy; this strawberry poke cake starts with a boxed mix but tastes like summer on a plate. A chilled dessert everyone raves about.

Ingredients
  

  • 1 box white cake mix Follow box instructions
  • eggs, oil, water As called for on box
  • 1 pkg strawberry gelatin (3 oz)
  • 1 cup boiling water
  • 0.5 cup cold water
  • 1 container whipped topping (8 oz) Thawed
  • 1.5 cups fresh strawberries Sliced
  • 2 tablespoon granulated sugar For macerating strawberries
  • whole strawberries For garnish

Equipment

  • 1 9x13 inch pan Glass preferred for visibility
  • 1 Wooden spoon For poking holes
  • 1 Large fork Alternative to spoon for poking
  • 1 Mixing bowl For gelatin
  • 1 Measuring Cup Glass or heat-safe for boiling water
  • 1 Offset spatula For smooth topping application

Method
 

  1. Prepare cake mix and bake in a 9x13 pan
  2. Cool completely on a wire rack
  3. Poke holes all over the cake with spoon handle
  4. Dissolve gelatin in boiling water
  5. Stir in cold water and cool slightly
  6. Slowly pour gelatin over entire cake surface
  7. Refrigerate for 3+ hours
  8. Toss strawberries with sugar and let sit
  9. Spread whipped topping over chilled cake
  10. Top with berries and garnish as desired
