Method
 

  1. Preheat oven to 375°F. Line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Cream butter, sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, then mix in vanilla extract.
  5. Gradually add dry ingredients, mixing until dough forms.
  6. Combine cinnamon and sugar in a small bowl. Roll dough balls in coating.
  7. Place on baking sheet, slightly flatten, and bake for 8-10 minutes.
  8. Let cookies cool on sheet for 5 minutes, then transfer to a wire rack.
