Method
 

  1. Pat the sablefish fillets dry, check for pin bones, and let them reach room temperature before scoring the skin lightly.
Make the Marinade
  1. In a bowl, whisk together miso paste, soy sauce, mirin, sake, ginger, garlic, and honey until smooth. Strain if needed.
Marinate the Fish
  1. Coat the fillets evenly in the marinade and refrigerate for 6-24 hours.
Preheat & Prep for Cooking
  1. Preheat oven to 400°F. Remove the fish from the marinade and pat the surface dry.
  2. Lightly oil a pan.
Sear the Fish
  1. In a hot skillet, place the fillets skin-side up. Sear for 1-2 minutes, then flip carefully.
Finish in the Oven
  1. Transfer the pan to the oven and bake for 10-12 minutes, basting occasionally.
Check for Doneness
  1. When fat pearls appear on the surface, cook for 2 more minutes.
  2. Fish should flake easily.
Rest & Garnish
  1. Metadata: Let the fish rest for 5 minutes, brush with extra glaze, and garnish with green onions and sesame seeds.
