Ingredients
  

  • 2 tablespoons dried butterfly pea flowers Creates natural deep blue color
  • 1 cup boiling water Extracts floral flavor and color
  • 2 tablespoons liquid honey Sweetens the tea naturally
  • 1 cup cold oat milk Provides a smooth white creamy base
  • 1 cup ice cubes Chills the drink and supports layers

Equipment

  • 1 Glass pitcher Heatproof for steeping
  • 1 Mesh strainer For removing petals
  • 2 tall glass tumblers Clear glass shows layers

Method
 

  1. Place the dried butterfly pea flowers in a glass pitcher and pour boiling water over them.
  2. Allow the flowers to steep undisturbed for seven minutes until the liquid turns deep blue.
  3. Strain the blue liquid through a mesh sieve into a jar to remove spent petals.
  4. Stir honey into the warm blue liquid until completely dissolved, then chill in the fridge.
  5. Fill two tall glass tumblers to the rim with solid ice cubes to support the liquid.
  6. Pour cold oat milk into the glasses filling each two thirds full over the ice.
  7. Pour the chilled blue tea slowly over the back of an inverted spoon onto the milk.
  8. Garnish with edible purple blossoms if desired and serve cold with straws.

Notes

Chill the steeped blue tea completely before assembling so it stays layered cleanly on top of the cold milk without mixing instantly.
