Preheat your non-stick pan or griddle over medium heat.
In a large mixing bowl, combine the hotcake mix and a pinch of salt.
In another bowl, whisk together the milk, eggs, melted butter, vanilla extract, and vinegar.
Gradually pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix.
Let the batter sit for 5 minutes to allow it to rest.
Pour about ¼ cup of batter onto the preheated griddle for each hotcake.
Cook until bubbles form on the surface (about 2-3 minutes).
Flip the hotcakes and cook for another 1-2 minutes until golden brown.
Stack the hotcakes on a plate and top with butter, syrup, or fresh fruit. Serve warm.
