Method
 

  1. Cut dragon fruit in half, scoop flesh, freeze chunks 2+ hours
  2. Add coconut milk and lime juice to blender first
  3. Add frozen banana and mango for natural sweetness
  4. Blend until smooth and creamy base forms
  5. Add frozen dragon fruit chunks to blender
  6. Blend on high until completely pink and smooth
  7. Add honey to taste for desired sweetness level
  8. Pour into chilled glasses with mint and fruit garnish
