- Cut dragon fruit in half, scoop flesh, freeze chunks 2+ hours
- Add coconut milk and lime juice to blender first
- Add frozen banana and mango for natural sweetness
- Blend until smooth and creamy base forms
- Add frozen dragon fruit chunks to blender
- Blend on high until completely pink and smooth
- Add honey to taste for desired sweetness level
- Pour into chilled glasses with mint and fruit garnish
