Ingredients
  

  • 1 large English cucumber Chopped
  • 1 cup frozen pineapple chunks Adds sweetness
  • 1 cup fresh spinach Packed
  • ½ cup Greek yogurt Plain or vanilla
  • ½ cup almond milk Or water
  • 1 tablespoon lemon juice Freshly squeezed
  • 1 teaspoon honey Optional

Equipment

  • 1 Blender High speed preferred
  • 1 Knife For chopping
  • 1 Cutting board Standard

Method
 

  1. Wash and chop the cucumber into chunks; peel if desired for smoother texture.
  2. Add almond milk, lemon juice, yogurt, cucumber, spinach, and honey to the blender.
  3. Top with frozen pineapple chunks.
  4. Blend on high for 45-60 seconds until completely smooth and green.
  5. Pour into glasses and serve immediately with a cucumber slice garnish.

Notes

Use frozen pineapple for a slushy texture without needing ice. Peel the cucumber for a brighter green color.
