- Brown ground beef and onion in a skillet; drain grease and stir in garlic.
- Add beef, potatoes, carrots, celery, broth, and spices to slow cooker.
- Cover and cook on Low for 7-8 hours or High for 3-4 hours until veggies are tender.
- Stir in cornstarch slurry, milk, and cheese; cook on High for 20 mins to thicken.
- Turn off heat, stir in sour cream, and serve warm with toppings.
Notes
Add the dairy ingredients at the very end to prevent curdling. Use Russet potatoes for the best texture.
