Crockpot Creamy Potato & Hamburger Soup

Ingredients
  

  • 1 lb lean ground beef 85/15 ratio
  • 4 large Russet potatoes Peeled and cubed
  • 3 large carrots Sliced into rounds
  • 1 stalk celery Finely diced
  • 1 medium yellow onion Diced
  • 3 cloves garlic Minced
  • 4 cups beef broth Low sodium
  • 1.5 cups whole milk Or half-and-half
  • 1 cup cheddar cheese Shredded
  • ½ cup sour cream Adds tang and creaminess
  • 3 tablespoon cornstarch For thickening
  • 1 teaspoon dried thyme Savory herb
  • 1 teaspoon dried parsley Herbaceous note
  • ½ teaspoon smoked paprika Adds depth

Equipment

  • 1 Slow cooker 6-quart size
  • 1 Skillet For browning beef
  • 1 Vegetable peeler For potatoes and carrots

Method
 

  1. Brown ground beef and onion in a skillet; drain grease and stir in garlic.
  2. Add beef, potatoes, carrots, celery, broth, and spices to slow cooker.
  3. Cover and cook on Low for 7-8 hours or High for 3-4 hours until veggies are tender.
  4. Stir in cornstarch slurry, milk, and cheese; cook on High for 20 mins to thicken.
  5. Turn off heat, stir in sour cream, and serve warm with toppings.

Notes

Add the dairy ingredients at the very end to prevent curdling. Use Russet potatoes for the best texture.
