Ingredients

  • 3 cups Leftover mashed potatoes - Cold, day-old preferred
  • 1 cup Sharp cheddar cheese - Shredded
  • 2 large Eggs - One for mixture, one for coating
  • 3 whole Green onions - Chopped
  • ¼ cup Bacon bits - Optional
  • 1 cup Panko breadcrumbs - For coating
  • 2 tablespoon All-purpose flour
  • ½ teaspoon Garlic powder
  • ½ teaspoon Salt - To taste
  • ¼ teaspoon Black pepper
  • 3 cups Vegetable oil - For frying
  • ½ cup Sour cream - For serving
  • 2 tablespoon Fresh chives - Chopped, for garnish

Instructions 

  • Transfer to paper towels and serve immediately with garnish.
  • Chill - Refrigerate mixture 30 minutes to firm up for easier shaping.
  • Shape - Form mixture into walnut-sized balls using hands or scoop.
  • Coat - Dip balls in egg wash then roll in panko breadcrumbs.
  • Fry - Cook in 350°F oil for 3–4 minutes until golden brown.
  • Drain - Transfer to paper towels and serve immediately with garnish.
