Ingredients

  • 8 slices Brioche bread - Thick cut, stale
  • 8 oz Mascarpone cheese - Or cream cheese, softened
  • 2 tablespoon powdered sugar - For filling
  • 4 large eggs - For custard
  • ½ cup heavy cream - For richness
  • ½ cup milk - Whole milk
  • 1 teaspoon vanilla bean paste - Or extract
  • ½ teaspoon cinnamon - Ground
  • 4 tablespoon granulated sugar - For the crust
  • 2 tablespoon butter - For frying

Instructions 

  • Whisk mascarpone, powdered sugar, and vanilla to create the filling.
  • Spread filling between two slices of bread to create sandwiches.
  • Whisk eggs, cream, milk, cinnamon, and vanilla in a shallow dish. Dip sandwiches for 10 seconds per side.
  • Fry in butter over medium-low heat for 3-4 minutes per side until golden.
  • Sprinkle granulated sugar on top and torch until melted and crunchy.
  • Serve immediately with syrup and thyme.

Notes

If you do not have a kitchen torch, you can caramelize the sugar under the oven broiler for 1-2 minutes. Watch closely to prevent burning. Use stale bread for the best absorption.
