Ingredients
  

  • 8 slices Brioche bread Thick cut, stale
  • 8 oz Mascarpone cheese Or cream cheese, softened
  • 2 tablespoon powdered sugar For filling
  • 4 large eggs For custard
  • ½ cup heavy cream For richness
  • ½ cup milk Whole milk
  • 1 teaspoon vanilla bean paste Or extract
  • ½ teaspoon cinnamon Ground
  • 4 tablespoon granulated sugar For the crust
  • 2 tablespoon butter For frying

  • 1 Kitchen torch For caramelizing

Method
 

  1. Whisk mascarpone, powdered sugar, and vanilla to create the filling.
  2. Spread filling between two slices of bread to create sandwiches.
  3. Whisk eggs, cream, milk, cinnamon, and vanilla in a shallow dish. Dip sandwiches for 10 seconds per side.
  4. Fry in butter over medium-low heat for 3-4 minutes per side until golden.
  5. Sprinkle granulated sugar on top and torch until melted and crunchy.
  6. Serve immediately with syrup and thyme.

Notes

If you do not have a kitchen torch, you can caramelize the sugar under the oven broiler for 1-2 minutes. Watch closely to prevent burning. Use stale bread for the best absorption.
