Creamy Coconut Lime Refresher

A hydrating and creamy tropical mocktail made with coconut milk, coconut water, and fresh lime juice, finished with a crunchy toasted coconut rim.

Ingredients
  

  • 1 cup Coconut water Pure, unsweetened
  • ½ cup Coconut milk Canned, full fat
  • ¼ cup Lime juice Freshly squeezed
  • 2 tablespoon Agave syrup Or simple syrup
  • ¼ cup Coconut flakes Toasted, for rim
  • 1 tablespoon Coarse sugar For rim
  • 2 slices Lime wheels Garnish

Equipment

  • 1 Cocktail shaker Or jar
  • 1 Citrus juicer Handheld
  • 1 Small Pan For toasting

Method
 

  1. Toast coconut flakes in a dry pan until golden; mix with sugar on a plate.
  2. Rub a lime wedge on the glass rim and dip into the coconut mixture.
  3. Combine coconut water, coconut milk, lime juice, and agave in a shaker.
  4. Shake vigorously until frothy.
  5. Pour over fresh ice in the rimmed glass.
  6. Garnish with a lime wheel and extra toasted coconut.

Notes

Use canned coconut milk for the creamiest texture. Toast the coconut flakes carefully as they burn quickly.
