Equipment

  • 1 9x13 baking dish (For baking the casserole)
  • 1 Large skillet (For cooking bacon)
  • 1 Mixing bowl (For preparing creamy sauce)

  • 1 Saucepan (Optional, if cooking pasta)

Ingredients

  • 3 cups Cooked chicken - Shredded or diced
  • 8 Bacon strips - Cooked crispy, chopped
  • 12 oz Pasta - Or 3 cups cooked rice
  • 8 oz Cream cheese - Softened
  • 1 cup Sour cream - Full-fat preferred
  • 1 Ranch seasoning mix - One packet
  • ½ cup Chicken broth - Low sodium if preferred
  • 2 cups Cheddar cheese - Shredded
  • 1 cup Mozzarella cheese - Shredded
  • ¼ cup Chives or green onion - Chopped, for garnish

Instructions 

  • Bring a large pot of salted water to a boil. Cook pasta until al dente, then drain and set aside.
  • In a skillet, cook bacon until very crispy. Remove and chop. Reserve 2 tablespoons of the bacon fat.
  • In a bowl, mix softened cream cheese, sour cream, and ranch seasoning. Whisk in broth until smooth and creamy.
  • In a greased 9x13 dish, combine pasta, shredded chicken, and half the bacon. Pour sauce over and toss to coat.
  • Sprinkle cheddar, mozzarella, and remaining bacon over the top. Cover with foil and bake at 375°F for 25 minutes.
  • Remove foil, bake uncovered 10–15 minutes until golden. Let rest 5 minutes, then top with chives before serving.
