Ingredients

  • 14 ounces coleslaw mix - shredded cabbage and carrots
  • 15 ounces black beans - rinsed and drained
  • 1 cup frozen corn - thawed
  • ½ cup red onion - finely diced
  • ½ cup fresh cilantro - chopped
  • 1 cup corn chips - Fritos style
  • ½ cup mayonnaise
  • ¼ cup sour cream
  • 2 tablespoons lime juice
  • 1 teaspoon chipotle powder
  • ½ teaspoon garlic powder

Instructions 

  • Whisk the mayonnaise, sour cream, lime juice, and spices in a small bowl until creamy.
  • Combine the cabbage mix, black beans, corn, and onion in a large salad bowl.
  • Pour the dressing over the vegetables and stir gently to coat every piece evenly.
  • Fold in the fresh cilantro and chill the salad for 30 minutes to meld flavors.
  • Top with corn chips right before serving to maintain their signature crunchy texture.

Notes

Always add the corn chips right before serving to prevent them from getting soggy. Use a serrated knife for easy red onion dicing.
