Method
 

  1. Toss fries with oil + seasoning.
  2. Bake until golden + crispy.
  3. Blend yolks, lemon, mustard, cayenne.
  4. Stream hot butter until thick.
  5. Fry bacon until crispy.
  6. Cook eggs sunny side up.
  7. Pile fries onto platter.
  8. Drizzle warm hollandaise.
  9. Add fried eggs to fries.
  10. Sprinkle crispy bacon.
  11. Add herbs + black pepper.
  12. Enjoy immediately.
