  • 1.5 cups chocolate cookie crumbs For crust

  • 1 tablespoon granulated sugar For crust
  • 24 oz cream cheese Softened
  • 1 cup granulated sugar For filling
  • 10 oz semi-sweet chocolate Melted and cooled
  • 3 large eggs Room temperature
  • ½ cup heavy cream For filling
  • ¼ cup cocoa powder Unsweetened
  • 2 teaspoon vanilla extract Flavor
  • 1 cup chocolate chips For ganache
  • ½ cup heavy cream Hot, for ganache
  • ½ cup chocolate frosting For piping decoration
  • 2 tablespoon chocolate shavings Garnish

Method
 

  1. Mix cookie crumbs, butter, and sugar. Press into a 9-inch pan and bake at 325°F for 10 mins.
  2. Beat cream cheese and sugar; add cocoa, cream, melted chocolate, and vanilla.
  3. Add eggs one at a time, mixing on low speed until just blended.
  4. Pour over crust and bake in a water bath for 60 mins. Cool in oven for 1 hour.
  5. Chill overnight. Top with ganache, pipe chocolate rosettes, and sprinkle with shavings.

Use a water bath to ensure a smooth, crack-free texture. Chill overnight for the best flavor development.
