Ingredients
  

  • 2 cups chocolate cookie crumbs Oreo or graham cracker
  • ½ cup unsalted butter Melted
  • 2 tablespoon granulated sugar For crust
  • 24 oz cream cheese Softened (3 blocks)
  • 1 cup granulated sugar For filling
  • 3 large eggs Room temperature
  • ½ cup sour cream Room temperature
  • 2 teaspoon vanilla extract Flavor
  • 1 cup semi-sweet chocolate chips For filling
  • 1 cup semi-sweet chocolate chips For ganache
  • ½ cup heavy cream For ganache
  • ¼ cup chocolate chips For garnish

Method
 

  1. Mix cookie crumbs, sugar, and melted butter; press into a 9x13 pan and bake at 325°F for 10 mins.
  2. Beat cream cheese and sugar until smooth; add sour cream and vanilla.
  3. Add eggs one at a time on low speed; fold in 1 cup chocolate chips.
  4. Pour over crust and bake for 35-40 minutes until center is almost set; cool completely.
  5. Pour hot cream over chips to make ganache; spread over bars and chill for 4 hours.

Notes

Ensure all dairy ingredients are at room temperature for a lump-free batter. Slice with a warm knife for clean edges.
