  • 1.5 pounds chicken thighs skin-on
  • ½ cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 2 cloves garlic minced
  • 1 teaspoon fresh ginger grated
  • 1 tablespoon olive oil

Method
 

  1. Heat oil in an oven-safe skillet and sear the chicken thighs until the skin is golden and crispy.
  2. Whisk together the sweet chili sauce, soy sauce, honey, garlic, and ginger in a small bowl.
  3. Pour the sauce over the chicken and turn each piece to ensure it is fully coated in the glaze.
  4. Place the skillet in the oven and bake until the sauce is thick and the chicken is tender.
  5. Serve warm over rice garnished with green onions and sesame seeds alongside sliced fresh vegetables.

Notes

Sear the chicken skin-side down first to get it crispy before adding the sauce. Use a meat thermometer to ensure the thighs reach an internal temperature of 165°F.
