  • Sharp knife (To cut pockets in chicken)
  • 8 Toothpicks (For sealing chicken edges)
  • 3 Mixing bowls (For flour, egg, and breadcrumb station)
  • Baking Sheet (Lightly greased)
  • Saucepan (For optional cream sauce)
  • Instant-read thermometer (To ensure 165°F doneness)

Ingredients

Chicken Prep

  • 4 Chicken breasts - Boneless, skinless
  • 8 Ham slices - Thin deli-style
  • 4 Swiss cheese - Full slices
  • Salt & pepper - To taste

Breading

  • 0.5 cup All-purpose flour
  • 2 Eggs - Beaten
  • 1.5 cups Panko breadcrumbs
  • 0.25 cup Parmesan cheese - Grated
  • 1 teaspoon Garlic powder

Cream Sauce (Optional)

  • 2 tablespoon Butter
  • 2 tablespoon Flour
  • 1 cup Chicken broth - Low sodium preferred
  • 0.5 cup Heavy cream
  • 1 tablespoon Dijon mustard

Instructions 

  • Pound chicken to even thickness using mallet
  • Cut pocket in side of breast and season
  • Add ham and cheese into each pocket
  • Fold over and secure with toothpicks
  • Set up breading station in three bowls
  • Dredge chicken in flour, egg, and breadcrumbs
  • Place on greased baking sheet
  • Bake at 375°F for 25–30 minutes
  • Make cream sauce while chicken bakes
  • Rest 5 mins, remove toothpicks, slice & serve
