Ingredients
  

Chicken Prep
  • 4 Chicken breasts Boneless, skinless
  • 8 Ham slices Thin deli-style
  • 4 Swiss cheese Full slices
  • Salt & pepper To taste
Breading
  • 0.5 cup All-purpose flour
  • 2 Eggs Beaten
  • 1.5 cups Panko breadcrumbs
  • 0.25 cup Parmesan cheese Grated
  • 1 teaspoon Garlic powder
Cream Sauce (Optional)
  • 2 tablespoon Butter
  • 2 tablespoon Flour
  • 1 cup Chicken broth Low sodium preferred
  • 0.5 cup Heavy cream
  • 1 tablespoon Dijon mustard

Equipment

  • Meat mallet To pound chicken evenly
  • Sharp knife To cut pockets in chicken
  • 8 Toothpicks For sealing chicken edges
  • 3 Mixing bowls For flour, egg, and breadcrumb station
  • Baking Sheet Lightly greased
  • Saucepan For optional cream sauce
  • Instant-read thermometer To ensure 165°F doneness

Method
 

  1. Pound chicken to even thickness using mallet
  2. Cut pocket in side of breast and season
  3. Add ham and cheese into each pocket
  4. Fold over and secure with toothpicks
  5. Set up breading station in three bowls
  6. Dredge chicken in flour, egg, and breadcrumbs
  7. Place on greased baking sheet
  8. Bake at 375°F for 25–30 minutes
  9. Make cream sauce while chicken bakes
  10. Rest 5 mins, remove toothpicks, slice & serve
