  • 3 lbs Yukon Gold potatoes - Cut into 1-inch cubes
  • 3 tablespoon Olive oil - Helps crisp the potatoes
  • 1 packet (1 oz) Ranch seasoning mix - Hidden Valley recommended
  • 1 teaspoon Garlic powder - Adds depth of flavor
  • 0.5 teaspoon Black pepper - Freshly ground
  • 0.5 teaspoon Paprika - For color and flavor
  • 2 cups Sharp cheddar cheese - Shredded
  • 0.5 cup Parmesan cheese - Grated
  • 4 strips Bacon - Cooked and crumbled (optional)
  • 2 tablespoon Fresh parsley - Chopped for garnish
  • Sour cream - For serving

Instructions 

  • Cut potatoes into 1-inch cubes.
  • Soak 15 min in cold water, then pat dry.
  • Toss with oil, ranch mix, garlic, pepper, paprika.
  • Spread on sheet, bake at 425°F for 35–40 min.
  • Sprinkle cheddar and Parmesan over hot potatoes.
  • Broil 1–2 min until bubbly and golden.
  • Sprinkle cooked bacon and parsley on top.
  • Plate and serve with sour cream on the side.
