- Cut potatoes into 1-inch cubes.
- Soak 15 min in cold water, then pat dry.
- Toss with oil, ranch mix, garlic, pepper, paprika.
- Spread on sheet, bake at 425°F for 35–40 min.
- Sprinkle cheddar and Parmesan over hot potatoes.
- Broil 1–2 min until bubbly and golden.
- Sprinkle cooked bacon and parsley on top.
- Plate and serve with sour cream on the side.
