Ingredients

For the Mushroom Filling

  • 8 oz baby bella mushrooms - finely chopped
  • 3 cloves garlic - minced
  • 2 tablespoon butter
  • ¼ cup cream cheese - softened
  • ½ cup shredded mozzarella
  • ¼ cup grated Parmesan
  • 2 tablespoon fresh parsley - chopped
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

For the Chicken

  • 4 large chicken breasts - 6–8 oz each
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoon olive oil - for searing

For the Garlic Butter Sauce

  • 4 tablespoon butter
  • 4 cloves garlic - minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • cup grated Parmesan
  • 1 teaspoon Italian seasoning
  • fresh parsley - garnish

Instructions 

  • Sauté mushrooms, add garlic, mix with cheeses and parsley.
  • Slice open and pound evenly.
  • Salt, pepper, garlic powder, Italian seasoning.
  • Add filling and secure with toothpicks.
  • Brown both sides.
  • Add butter and garlic.
  • Add cream, broth, Parmesan.
  • 375°F until 165°F.
  • Spoon sauce over chicken and garnish.
