  • 8 oz baby bella mushrooms finely chopped
  • 3 cloves garlic minced
  • 2 tablespoon butter
  • ¼ cup cream cheese softened
  • ½ cup shredded mozzarella
  • ¼ cup grated Parmesan
  • 2 tablespoon fresh parsley chopped
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
For the Chicken
  • 4 large chicken breasts 6–8 oz each
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • 2 tablespoon olive oil for searing
For the Garlic Butter Sauce
  • 4 tablespoon butter
  • 4 cloves garlic minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • cup grated Parmesan
  • 1 teaspoon Italian seasoning
  • fresh parsley garnish

Equipment

  • 1 Sharp knife For butterflying chicken breasts
  • 1 Meat mallet To pound chicken evenly
  • 1 Large oven-safe skillet Cast iron preferred
  • 6–8 Toothpicks To secure stuffed chicken
  • 1 Instant-read thermometer For perfect doneness

Method
 

  1. Sauté mushrooms, add garlic, mix with cheeses and parsley.
  2. Slice open and pound evenly.
  3. Salt, pepper, garlic powder, Italian seasoning.
  4. Add filling and secure with toothpicks.
  5. Brown both sides.
  6. Add butter and garlic.
  7. Add cream, broth, Parmesan.
  8. 375°F until 165°F.
  9. Spoon sauce over chicken and garnish.
