- Drain ricotta 30 minutes; pat dry
- Whisk flour, baking powder, baking soda, salt
- Beat butter and sugar until fluffy
- Beat in ricotta, egg, vanilla, lemon zest
- Fold in mini chocolate chips
- Scoop dough onto lined sheets
- Bake 350°F for 12–15 minutes
- Cool completely on rack
- Beat filling ricotta + powdered sugar + vanilla (+ cinnamon)
- Sandwich cookies with filling
- Drizzle chocolate; dust powdered sugar
