- Combine brown sugar and water in a small saucepan. Bring to a boil, stir until sugar dissolves. Add vanilla and cinnamon. Simmer 2 minutes, cool.
- Brew espresso or strong coffee. Let cool 1–2 minutes.
- Pour espresso and 2 tablespoon syrup into a mason jar while warm.
- Add ice and shake hard for 15–20 seconds to build foam.
- Fill serving glass with fresh ice. Strain shaken mixture over.
- Slowly pour oat milk over the top. Stir gently.
