Ingredients

  • 500 g ground beef Lean mince works best for a clean sear
  • 4 small flour tortillas Soft, taco-sized varieties
  • 4 slices cheddar cheese Sharp cheddar melts beautifully over hot meat
  • 1 cup shredded lettuce Iceberg variety chopped fine for classic crunch
  • ¼ cup minced white onion Scattered fresh over the finished cheese
  • ½ cup special burger sauce Combination of mayonnaise, relish, and yellow mustard
  • ½ teaspoon sea salt Sprinkled directly over the meat balls

Equipment

  • 1 Cast iron skillet Provides the best even heat for a deep savory sear
  • 1 heavy metal spatula Essential for pressing the meat flat into the pan
  • 1 Measuring spoons For mixing up the accurate secret sauce ratios

Method

  1. Divide the seasoned ground beef evenly into four uniform ball shapes to prepare for the skillet smash.
  2. Press one beef ball directly onto each flour tortilla face, flattening it right out to the edges cleanly.
  3. Heat your heavy cast-iron skillet over medium-high heat until the pan surface is completely hot and dry.
  4. Place the loaded tortilla meat-side down into the hot skillet, pressing hard with a metal spatula.
  5. Cook undisturbed for three minutes until the beef develops a deeply caramelized, savory brown outer crust.
  6. Flip the tortilla carefully and lay a slice of sharp cheddar cheese over the hot seared beef layer.
  7. Cover the pan for one minute until the cheese is completely melted and the bottom tortilla turns crispy golden.
  8. Remove from heat and scatter with shredded lettuce, minced onion, and a generous drizzle of burger sauce before serving hot.

Notes

Smashing the beef into an ultra-thin layer right to the edges of the tortilla ensures it stays attached when flipped and cooks quickly to form a savory crust.
