Ingredients
  

  • ½ cup Protein Powder Whey or plant-based
  • ½ cup Almond Flour
  • 2 tablespoon Coconut Flour
  • ¼ cup Natural Sweetener Erythritol, Monk Fruit, etc.
  • 1 Egg
  • ¼ cup Nut Butter Almond or peanut butter
  • ¼ cup Greek Yogurt Plain unsweetened
  • ½ teaspoon Vanilla Extract
  • cup Dark Chocolate Chips
  • 1 pinch Sea Salt Optional for topping

Equipment

  • 1 Mixing bowl Large size, for combining ingredients

Method
 

Mix Dry Ingredients
  1. Combine protein powder, almond flour, coconut flour, natural sweetener, and salt in a large bowl.
Mix Wet Ingredients:
  1. In another bowl, beat the egg, add nut butter, Greek yogurt, and vanilla extract, and mix well.
Combine Mixtures
  1. Slowly mix the wet ingredients into the dry ingredients until just combined. Fold in chocolate chips.
Chill Dough:
  1. Cover and chill the dough for 30 minutes in the refrigerator.
Shape and Bake
  1. Form 2-inch balls, place on the baking sheet, and flatten slightly.
  2. Bake for 10-12 minutes at 350°F.
Cool
  1. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
