Ingredients

  • ½ cup Protein Powder - Whey or plant-based
  • ½ cup Almond Flour
  • 2 tablespoon Coconut Flour
  • ¼ cup Natural Sweetener - Erythritol, Monk Fruit, etc.
  • 1 Egg
  • ¼ cup Nut Butter - Almond or peanut butter
  • ¼ cup Greek Yogurt - Plain unsweetened
  • ½ teaspoon Vanilla - Extract
  • cup Dark Chocolate Chips
  • 1 pinch Sea Salt - Optional for topping

Instructions 

Mix Dry Ingredients

  • Combine protein powder, almond flour, coconut flour, natural sweetener, and salt in a large bowl.

Mix Wet Ingredients:

  • In another bowl, beat the egg, add nut butter, Greek yogurt, and vanilla extract, and mix well.

Combine Mixtures

  • Slowly mix the wet ingredients into the dry ingredients until just combined. Fold in chocolate chips.

Chill Dough:

  • Cover and chill the dough for 30 minutes in the refrigerator.

Shape and Bake

  • Form 2-inch balls, place on the baking sheet, and flatten slightly.
  • Bake for 10-12 minutes at 350°F.

Cool

  • Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
