Ingredients
  

  • 2 cups Cooked chicken Shredded or diced
  • 4 cups Chicken broth Low sodium preferred
  • 2 Celery stalks Diced
  • 2 Carrots Diced
  • 1 Onion Chopped
  • 2 cloves Garlic Minced
  • 1 teaspoon Thyme Dried or fresh
  • 1 Bay leaf Whole
  • 1 cup Peas Optional
  • 1 cup Corn Optional
Dumplings:
  • 2 cups Bisquick mix Or homemade baking mix
  • cup Milk Warmed
  • 1 tablespoon Dried parsley Optional
  • ½ teaspoon Black pepper Adjust to taste

Equipment

  • 1 Dutch oven Large, heavy pot with lid
  • 1 Mixing bowl For dumpling dough

Method
 

  1. Sauté onions, celery, and carrots.
  2. Add garlic, cook for 30 seconds.
  3. Pour in broth, add seasonings & chicken.
  4. Mix Bisquick, milk, parsley, and pepper.
  5. Drop spoonfuls of dough into broth.
  6. Cover and cook for 15 minutes.
  7. Check dumplings for doneness.
  8. Adjust seasoning and let rest 5 min.
