  • 1 Mixing bowl (For dumpling dough)

Ingredients

  • 2 cups Cooked chicken - Shredded or diced
  • 4 cups Chicken broth - Low sodium preferred
  • 2 Celery stalks - Diced
  • 2 Carrots - Diced
  • 1 Onion - Chopped
  • 2 cloves Garlic - Minced
  • 1 teaspoon Thyme - Dried or fresh
  • 1 Bay leaf - Whole
  • 1 cup Peas - Optional
  • 1 cup Corn - Optional

Dumplings:

  • 2 cups Bisquick mix - Or homemade baking mix
  • cup Milk Warmed
  • 1 tablespoon Dried parsley - Optional
  • ½ teaspoon Black pepper - Adjust to taste

Instructions 

  • Sauté onions, celery, and carrots.
  • Add garlic, cook for 30 seconds.
  • Pour in broth, add seasonings & chicken.
  • Mix Bisquick, milk, parsley, and pepper.
  • Drop spoonfuls of dough into broth.
  • Cover and cook for 15 minutes.
  • Check dumplings for doneness.
  • Adjust seasoning and let rest 5 min.
