Cut salmon into 1-inch cubes and pat dry with paper towels.
Set up three bowls: flour + cornstarch, beaten eggs, and panko.
Season salmon with salt, pepper, garlic powder, and paprika.
Dredge salmon in flour, then egg, then panko.
Place coated bites on a plate and chill for 15 minutes.
Preheat air fryer to 400°F and spray salmon with oil.
Cook for 7–8 minutes until golden and crispy.
Mix all sauce ingredients in a bowl until smooth.
Drizzle or toss cooked bites in bang bang sauce.
Garnish with chopped parsley or green onions and serve.
