Ingredients
  

  • 1 pound ground chicken Blend of thigh and breast preferred
  • ½ cup breadcrumbs Soaked in milk
  • ¼ cup whole milk For moisture
  • 1 large egg Beaten
  • ¼ cup Parmesan cheese Grated
  • 3 cloves garlic Minced
  • ¼ cup parsley Fresh, chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil For brushing before baking
  • 2 cups marinara sauce For simmering after baking
  • fresh basil For garnish
  • extra Parmesan Optional, for topping

Equipment

Method
 

  1. Soak breadcrumbs in milk for 5 minutes until soft.
  2. Mix soaked breadcrumbs with egg and Parmesan cheese.
  3. In another bowl, combine ground chicken, garlic, herbs, salt, and pepper.
  4. Add breadcrumb mixture to chicken and mix gently until combined.
  5. Shape into 1.5-inch balls with damp hands.
  6. Arrange on lined baking sheet and brush with olive oil.
  7. Bake at 400°F for 18–20 minutes until golden and cooked through.
  8. Simmer in marinara sauce for 5 minutes to finish.
