Ingredients

  • 1 pound ground chicken - Blend of thigh and breast preferred
  • ½ cup breadcrumbs - Soaked in milk
  • ¼ cup whole milk - For moisture
  • 1 large egg - Beaten
  • ¼ cup Parmesan cheese - Grated
  • 3 cloves garlic - Minced
  • ¼ cup parsley - Fresh, chopped
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil - For brushing before baking
  • 2 cups marinara sauce - For simmering after baking
  • fresh basil - For garnish
  • extra Parmesan - Optional, for topping

Instructions 

  • Soak breadcrumbs in milk for 5 minutes until soft.
  • Mix soaked breadcrumbs with egg and Parmesan cheese.
  • In another bowl, combine ground chicken, garlic, herbs, salt, and pepper.
  • Add breadcrumb mixture to chicken and mix gently until combined.
  • Shape into 1.5-inch balls with damp hands.
  • Arrange on lined baking sheet and brush with olive oil.
  • Bake at 400°F for 18–20 minutes until golden and cooked through.
  • Simmer in marinara sauce for 5 minutes to finish.
  • 9 Serve hot, garnished with basil and more Parmesan.
