Method
- Heat oven to 400°F and prep baking rack.
- Rub chicken with spice mix.
- Secure chicken with bacon strips and toothpicks.
- Lightly coat with oil, brown sugar, thyme.
- Cook 25–30 minutes until 165°F internal temp.
- Crisp bacon 2–3 mins if needed.
- Let sit 5 minutes before slicing.
Notes
You can prep this dish in advance and store it in the fridge before baking. Also works great with turkey bacon!
