  • 1 cup whole milk Warmed for smooth custard
  • 2 large egg yolks Enriches custard filling

  • 1 pound fresh apricots Pitted and sliced thin
  • 2 tablespoons sliced almonds Scattered over pastry edge

Method
 

  1. Roll pie crust dough round on a floured board and place on a parchment-lined baking sheet.
  2. Warm whole milk in a small saucepan over low heat until steaming gently.
  3. Whisk egg yolks, honey, and cornstarch together in a bowl until smooth.
  4. Temper hot milk into the egg mixture and cook until thick custard forms.
  5. Spread the cooled custard evenly across the center of your chilled pie crust.
  6. Arrange sliced apricots in neat overlapping circles over the custard layer.
  7. Fold bare pastry edges over the fruit ring and brush with milk.
  8. Bake at 400°F for thirty-five minutes until golden brown and crisp.
