  • 4 large eggs Room temperature
  • 2 cups whole milk Fresh not ultra-filtered
  • ½ cup granulated sugar
  • 1 teaspoon vanilla extract Pure
  • ¼ teaspoon ground nutmeg
  • teaspoon salt

  • 6 Custard cups Or 1 large baking dish
  • 1 Roasting pan For water bath
  • 1 Fine-mesh strainer For smooth texture
  • 1 Mixing bowl Large
  • 1 Kettle For hot water bath
  • 1 Whisk For mixing
  • 1 Measuring set Cups and spoons

Method
 

Step 1: Preparation
  1. Prep Time: 5 minutes
  2. Preheat oven to 325°F
  3. Set up roasting pan
  4. Start heating water for bath
  5. Warm milk slightly
Step 2: Mix Custard
  1. Prep Time: 10 minutes
  2. Beat eggs gently
  3. Add sugar gradually
  4. Stir in warm milk
  5. Add vanilla and salt
  6. Strain mixture
Step 3: Bake
  1. Cook Time: 35-40 minutes
  2. Fill custard cups
  3. Sprinkle with nutmeg
  4. Place in water bath
  5. Bake until set but still jiggly
Step 4: Cool
  1. Cool Time: 30 minutes
  2. Let cool in water bath
  3. Remove from bath
  4. Cool completely
  5. Refrigerate if desired
