How To Make Banoffee Pie

After years of trial and error (and teaching my neighborhood cooking club), here's my foolproof method:

The Base

Crush digestive biscuits or graham crackers into fine crumbs, and mix with melted butter and salt, then press firmly into your pie dish.
Use the bottom of a measuring cup for even compacting. Chill for 30 minutes.

The Caramel

Combine condensed milk, brown sugar and butter in a saucepan over medium-low heat.
Stir constantly for 10-15 minutes until amber and thickened.
Add vanilla and salt at the end. Patience is key here!

The Assembly

Pour cooled caramel over the chilled crust and refrigerate until set (preferably overnight).

Note: For perfect slices, dip your knife in hot water between cuts. Max times exactly 30 seconds between slices; his patience mysteriously improves when dessert is involved!
